Meet the producers

Balagne, a region busting with ancestral agricultural activity, is home to many producers who shape the its culinary identity. Many of these work alongside the Hotel Corsica to delight taste buds at the La Tavola restaurant. They include the market gardeners of Clos Calvese, who carefully cultivate sun-drenched fruit and vegetables, as well as winemakers, pork butchers and cheesemakers, whose expertise shines through in chef Samuel Neveu's dishes. Setting off to meet them is an opportunity to forge a link between those who create and those who savour.
